Recipe: Fruit Pizza & Raisin Cookies

The Fruit Pizza



200 g hung yoghurt, thick
4 tsp honey 
1 loaf whole wheat bread
2 cups seasonal fresh fruits, assorted, sliced or chopped
1 cup dry fruits, assorted
1 tbsp maple syrup

1. Remove water from yoghurt and then stir in honey and mix well. Set aside to cool in the refrigerator.

2. Spread this mixture on three bread slices. Spread or arrange fresh seasonal fruits on it. 

3. On another slice, spread this yoghurt mixture and spread assorted dry fruits on it.

4. Garnish with maple syrup and serve.


The Raisin Cookie



200 g butter, softened
200 g caster sugar
85 g plain flour
1 tsp baking powder
½ tsp ground cloves
1 tsp ground cinnamon
250 g porridge oats
150 g raisins
3 tbsp milk

1. Preheat oven to 160° C. Line a baking sheet with butter paper. Cream sugar and butter till light and fluffy in a bowl.  

2. In another bowl, sift flour, baking powder, cloves and cinnamon. 

3. Add this to the butter mixture with oats and raisins and mix well. Pour in milk and mix into a soft dough.

4. Divide dough into four portions and shape each of it into equal-sized balls. Place these on the baking sheet and flatten it by gently pressing with your hand. 

5. Bake for 12 minutes or till golden brown. Serve hot or store in a jar for later use.
