Recipe: Christmas Pudding Truffles

Recipe: Christmas Pudding Truffles

This recipe makes 18 pieces. 


You will need:

75g unsalted butter

125g dark chocolate

200g Madeira cake (or loaf cake)

50g glace cherries, halved

50g raisins 25g pecans

1/2 tsp vanilla extract

2 tbsp icing sugar Decoration

50g (2oz) ready to use fondant icing

Red and green food colour

110g (4oz) royal icing sugar

4 tsp water


Method:

Put the butter and chocolate in a heatproof bowl and melt together over a saucepan of warm water, stirring occasionally. You can also melt it in a microwave using three to four 15 second bursts, stirring between each. Set aside to cool slightly.

Chop the cake, cherries, raisins and pecans into small pieces or whizz in a food processor.

Tip into the chocolate mix and add vanilla 3 and icing sugar. Stir until combined and refrigerate for an hour.

Line a baking sheet with parchment or clingfilm. Take tablespoons of the truffle mix and roll into balls. Put them on the baking sheet. When you've finished, put the sheet in the fridge for an hour.

To decorate the truffles, first make the "holly". Colour 1/4 of the fondant icing red and then roll out 36 small balls. Colour the remaining fondant green and roll out thinly. Cut out 36 holly leaves. Sit decorations on a plate lined with clingfilm.

Put the royal icing sugar in a bowl. Add half of the water and stir in, then add extra water, a couple of drops at a time, to make a stiff icing. Drop 1/2 tsp icing on top of a truffle and use the tip of a knife to spread it out a little. Allow to dry slightly, then sit two holly berries and leaves on the top of the truffle. Repeat with remaining truffles then refrigerate for 3-4 hours to allow the icing to set.
