The Cookbooks Chefs Swear By

 For these chefs, these books are not just a point of reference but a legacy that they want to pass on to next generation. And for the young chefs, those books are no less than a food encyclopaedia.

There are two favourite books that I always cherish and refer to and they include-Charlie Trotter's The Kitchen Session and Tetsuya by Tetsuya Wakuda. The best part with Charlie Trotter was, he had never been to India, but always quoted and talked about Vedas and Gita. Apart from recipes, his books talk about how food is important for people, nutritional values and more. Whereas, the reason behind liking Tetsuya's work is his philosophy of 'less is more'. So in this world where people are behind more and more, his approach of les is more attracted me to his art of cooking and till date both of them are part of writings, ideas and even in my restaurant you can find inspirations from their philosophy of food.

For a chef it is difficult to select one or two as his/her favourite cookbook. I have a collection of more than 300 cookbooks. Out of them, if I have to select few that have been my building blocks I would say Modernist Cuisine by Nathan Myhrvold. I would say it is the best cookbook till date with 5 series and one manual. It is almost a food encyclopaedia. I love doing modern cooking and that book offers a balanced amalgamation of theory and practicality of dishes with detailed pictorial presentation. The book also offers in depth details about flavours, colors, taste, cooking and how these elements all together form a perfect platter.

Jamie Oliver' s Comfort Food is one of my favourite cookbooks since it has recipes which are extremely easy for anyone to make. The ingredients which are mentioned in the book are usually easily available and are quite healthy too. I picked up this book as I am fond of Jamie as a chef and regularly watch his shows for his precision, his style and his knowledge. Another book that I am equally passionate about is James McNair Cooks South East Asian, as the book is filled with amazing South East Asian recipes. The description of the ingredients is penned down clearly for each of the recipes and I could easily relate with them as if they are from my mom's kitchen. I must say, the book has an instant connect with me and the Thai recipes mentioned in the book, take me down the memory lane.

No cook can become a chef if he/she does not understand the essence of the philosophy behind the art of cooking, the passion to keep you going, the consequences and the sacrifices you have to make or rather embrace because only by then it makes you reach at the zenith of excellence and at the peak of perfection. These is my core belief and this is my single most driving force. For me, cooking and plating are equally important and that sums up my art of cooking with detailed interest. The cookbook that gave me insight to my cooking is- White Heat by Marco Pierre White. And if you want to know why it is my favourite, come try my food and you will know it.

I have always been in absolute love with costal food and my love for it, is drawn in the simple recipes from the book of Kerala- The Essential Kerala Cookbook by Vijayan Kannampilly, where the recipes are actually featured from villages and places I wish to discover in the interiors of the back waters! And of course Heston Blumenthal is my man. The fun gastronomical- molecular elements are always fun. His book Heston Blumenthal at Home features easy steps to create food in an outstanding construction and unseating each element. Simple and easy to cook!
